I was looking for self-rising flour here in Oregon some weeks back and it was nowhere to be found. I wound up cobbling together a d-i-y version by adding baking powder and a little salt to "regular" flour, but the results were, shall we say, less than stellar. Now I know why...
ReplyDeleteThat explains why I've never been overly impressed with the biscuits served in even the most reputedly authentic Southern restaurants here in California. Rarely are they any better than what I can manage with a box of Bisquick.
