The child grabs several pieces, ruining the composition, and eats them, noisily proclaiming " Ah, feicheng, feicheng haochu, wode Baba " (or at least, this is what my child says -- other kids may say stuff like "It's crispy like fried, but it ain't greasy like fried!") Except it is greasy, and indeed, grease is an irreducible part of its appeal. IMHO, they should replace all those statues of Robert E. Lee with statues commemorating great Southern cooking: fried chicken, hominy, hush puppies, greens, Johnny cakes, pecan pie, barbecue in all its huge variety, the list goes on and on and includes at least 15 stand-alone regional cuisines.
