Part of this, of course, is because grandma's cooking doesn't reach back to the days of mules and feedsack dresses, anymore.

But even in my lifetime, the ingredients have changed enough to make some store-bought white trash recipes invalid. One example: the trick of adding pudding mix to cake mix. Nowadays, that (or something analogous) is done straight from the factory.

The best recipes ring a few idiosyncratic changes on the old standards, and give an ancestor or church lady credit for it. If for no other reason than ancestors and church ladies don't get enough credit, anyhow.

And using Hellman's in a Southern BBQ joint?
Huh uh. Nope.
