[Nicolas Freeling] said he preferred the kitchen because you did not have to be nice to the customer.

He also claimed that all fiction (with the possible exception of Jane Austen's) is propelled by crime or misdemeanour.

Readers of a certain age and sensibility will recall the careers of Piet Van der Valk (and his wife Arlette), and Henri Castang (and his wife Vera).  Before he was a writer, Freeling was a cook.  And his two non-fiction books, The Kitchen, and The Cook, are well worth the read.

Brought to mind because I've just now gotten a copy of Jacques Pépins "The Apprentice", to read.
